Can I use any brand or bags in my Vacuum Sealer?
If you are buying bags from a Vacuum Sealer Vendors (like Crenova, Gourmia, Nesco, Seal-Meal, and Weston), the bags will only work in Vacuum Sealers from that vendor. If you are buying bags from a third party vendor they are usually "Universal Vacuum Sealer Bags" and will work with most Vacuum Sealers. Is it cheaper to buy pre-cut vacuum sealer bags, or should I buy vacuum sealer rolls?
If you were extremely precise with your measuring cutting and sealing you could get 56 one quart bags from an 11" x 50ft bag roll. However you're never going to be that precise. If you're using a roll, many times you're going to be able to use a size smaller than one quart. Over the life of a roll you will often get more than 56 bags, which will end up costing you less per use than using 1 quart bags every time you want to vacuum seal something. However if your vacuum sealer doesn't have on-board bag roll storage it can be awkward to work with a roll. If your machine accommodates a roll you should buy that, if it doesn't, then stick with pre-cut bags, which are a lot easier to work with.
Why do Vacuum Sealer Bags have two thicknesses?
If you're buying a good quality vacuum seal bag you'll notice the bags are different on each side, one side is smooth, and the other side is textured. The smooth side is considered the "front" of the bag, they usually run between 2 Mil and 4 Mil in thickness. 1 Mil is one one-thousandth of an inch, or 0.0001" thick, so a 3 Mil bag is 0.003" thick. The textured side of the bag is considered the back of the bag and is usually thicker than the front. The back of vacuum sealer bags usually run from 8 Mil to 13 Mil in thickness.
Does the thickness of a Vacuum Sealer Bag matter?
Generally speaking thicker bags are better, they last longer and protect your food better. If you are Cooking Sous Vide or storing your food for a short period of time, the thickness isn't going to matter. If you're going to be storing your food long term in the freezer you're going to want a thicker bag, something that's preferably 4 Mil in the front and at least 10 Mil in the back. FoodSaver Vacuum Sealer Bags are (3 Mil - 11.5 Mil) and CaseKix Vacuum Sealer Bags are (3.5 Mil - 12 Mil) are the thickest bags we reviewed, they were also some of the most expensive per square foot.
Does it matter which way you use a Vacuum Sealer Bag?
Yes it does matter, as we discussed above the textured side of the bag is considered the "back" of the bag. The texture you feel are actually one way microscopic air valves, they allow air escape, but don't allow any air to enter. When you are vacuum sealing you want the back side to be down, this way any liquid acts as a barrier allowing more air to be vacuumed out. If you do it the "wrong way" your bag will still vacuum seal it just won't be as tight a seal as possible. This matters more with long term food storage.
